We spent the weekend camping and hiking while celebrating our friends recent engagement. It was a great weekend and just what I needed to inspire this new delicious recipe. It’s light, fresh, and so easy.
What you need:
- Your white fish of choice, I chose orange roughy
- Aluminum foil
- Olive oil
- Fresh spinach
- Grape tomatoes
- 1 lemon
- Spices! I used garlic powder, pepper, and parsley
Directions:
1) Preheat the oven to 400 degrees
2) Pour about 1 tsp. of olive oil on a sheet of aluminum foil
3) Place 1.5 c. of fresh spinach, grape tomatoes, and fish on top
4) Season generously and top it off with another tsp of olive oil and fresh lemon juice
5) Wrap the aluminum foil into a packet around the fish and veggies
6) Bake for approximately 15 minutes or until flakey
7) Enjoy!

That looks good… but, I rather thought they weren’t fishing orange roughy anymore.

I had not heard that before. I did some research and yes it looks like there was a shortage. But they’re still selling it!
